Why is Gnome the main UI ?
Xfce is more stable, easier to use, faster, lightweight!

Its not the "main" UI as you can download Kali image with other desktop managers from https://www.kali.org/downloads/:

- E17
- Kde
- Lxde
- Mate
- Xfce

You can also switch at any point or create your own custom ISO with whatever one you like too!
