Question CONFUSED - need a detailed answer - Kali USB 'Persistent'

i want to boot kali off a usb drive but before i do that i need to understand what persistent means... i have read in the documentation this :

Adding persistence (the ability to save files and changes across live boots) to your Kali Linux image can be very useful in certain situations.

but im confused on what this means... does it mean i can save files and access them for ever or does it mean when i save a file it will be saved in my other os (Win7)

    many thanks!

Basically what persistence does is creates a partition on your USB drive, be mindful though that before you select to run it live, ensure that you press tab and type the name of your persistence partition. Otherwise your partition won't load.
