Is there a book or two that covers the subject? A quick search finds a few things but I don't know what is legit or not.

Here is two that I was thinking about to get a good idea on the subject:

Hacking with Kali: Practical Penetration Testing Techniques by James Broad

Web Penetration Testing with Kali Linux by Joseph Muniz

Some of the tools I am familier with but others are not, not looking for a step by step guide on how to do something but more these are are the resources available in Kali, here are what they are used for etc. A good general guide.

Look up "kali linux cookbook". It's ~$50 on the web. It has tons of information regarding Kali and could probably answer all of your questions and more.

I didn't consider that one because it got dismal reviews on amazon.

I've only skimmed it and I didn't read any of the reviews, but we used it for some sections in my Pentesting class at Uni and the information from those sections were good. If you're unsure, there are probably demo versions online somewhere you can check before you decide.
