You can use the "Kali Linux mini ISO" to get the bare bones install - http://docs.kali.org/network-install...ni-iso-install
(Make sure to disable 'Debian desktop environment')
From there, you can use meta packages to install the groups of tools you wish - http://www.kali.org/news/kali-linux-metapackages/

You need to install xorg as well...By the way, the default runlevel for Debian is 2 not 5...
