That's the beauty of Linux, you can change anything, even re-brand it differently! Not sure if Kali EULA allows it, but I guess with Linux in question, that's OK to do!

If you open the following file:

vi /etc/gdm3/greeter.gsettings

You'll figure out everything you need to know. Take backups!
