May be a newbie question but in order to access the desktop while several windows are open , ctrl+alt+d does nothing.
Any tricks or something missing?

You need to define your own shortcuts.
1.) From the desktop, select Applications > System Tools > Preferences > System Settings and then Keyboard
2.) Click the Shortcuts Tab
3.) Select Navigation from the left hand pane
4.) Scroll the right window down until you see "Hide all normal windows"
5.) Click the text "Disabled" in the same row as Hide all normal windows.
6.) press CTRL + ALT + D and the shortcut will be saved.
You're not really making shortcuts in Kali (as an os) , it's actually making shortcuts in the display manager (gnome) as the process would change if you swap display managers
I'm not sure what you are looking for... like something in the manual? You can see all the shortcuts in use on gnome by navigating the keyboard > shortcuts page.
