A lot of the tools in Kali have their own homepage and tutorials, if you want details on a particular tool it's really easy to find some documentation.

List all installed packages, along with package version and short description

dpkg -l

make a file on ur Desktop called (installedsoftware)

dpkg -l >> ~/Desktop/installedsoftware # now u can open with leafpad.

that is a multipart article with some of the tools from backtrack 5 r3, they are also in kali.
