how can I clear the Bloodhound CE database?
With the github version I used to run docker-compose down -v to wipe everything but what’s the recommended way to do this with the bundled version?

Actually, there’s another way, if you click on Administration on the expanded menu on the left, you need to move your mouse away for the menu to collpase again, that will reveal the admin options. I always clicked administration but nothing happened. The UI takes some getting used to.
