It would normally be the disk format for the vmdk that is not recognized/supported by ESXi. You could try converting the vm by using the VMware converter.
It seems like you don't have the right url in your source.list file. Change the source.list content to :
deb http://http.kali.org/kali sana main non-free contrib
deb-src...
Make sure to have http://http.kali.org/kali instead of simply http://http.kali.org in your /etc/apt/sources.list file

The amd64 ISO works with Intel 64bit processors as well. So in essence, it doesn't matter as you said :)
The '$' at the beginning is not part of the commands to type. Remove it and try again to see if it works better.
It should work as long as nothing is blocking yes (like AV or firewall). For your other question, there's no "sure" method that I know of.
