visit tryhackme or hackthebox. they offer various free rooms. if you can afford it, then do an offsec course(pen200)
does this all work with the tools of Kali-Linux?

Yes.
I dont know is it available in German. The video-based training materials probably not, but you could google translate the written materials. After that, it’s a case of learning the tools and methodologies, which I am sure there is plenty of available in German.
i can’t really see, what the prices for all these “lessons” are? Or is “tryhackme” mostly for free?
some lessons and content is free, some is paid.
There are enough free materials out there to learn ethical hacking, the main advantage of paid subscriptions to some of these platforms, is they will have a structured learning path available that will teach you subjects that build your knowledge in a logical way.
learn the basics of Linux and the terminal, learn the basics of networking and how the web works, and use platforms like tryhackme and hackthebox to hone your skills.
The most important skills for ethical hacking are reading and research. Are you really telling me you can’t find the prices on the website we gave you?

I was about to ask a very similar question as I’m also just getting into learning ethical hacking, very helpful thread!
Do you have any suggestions for learning the tools available on kali out of the box? Or would a better way to be to just learn them as I need them when going through other material?
I’d recommend not to worry about what Kali comes with “out of the box”.
These tools are not Kali specific, may change frequently, and might not all be useful unless for very specific use cases. It’s also a necessary skill to learn how to identify and subsequently install additional resources.
If you look through the recommended material/platforms however, such as Hack The Box for example, you’ll be pleasantly surprised how most of the things are ready to go on Kali.
Go to HTB (Hackthebox) academy and do the general knowledge courses like Linux fundamentals and Introduction to networking first. Then try attempting some offensive courses like introduction to Metasploit Framework, reconaissence, etc. (Srry for bad spelling)
What I would recommend 100% is:
Start with Linux Basics for Hackers by Occupytheweb
Then go to Getting Started Becoming a Master Hacker by Occupytheweb
That’s the basics, for networking I recommend his networking book.
